Recipe: Orange Vinaigrette

This fast & easy orange vinaigrette will have you wondering why you don’t make homemade dressings for your salads more often!

It also can be used as a marinade or sauce for poultry and fish.

Makes 8 servings.

Ingredients:

  • 2 Tbsp onion, diced

  • 1 tsp orange zest

  • Juice of 1 orange

  • Juice of 1 lemon

  • 2 tsp Dijon mustard

  • ½ tsp sea salt

  • ½ tsp freshly ground pepper

  • ⅓ cup (80 ml) extra-virgin olive oil

 

Directions:

  1. In a mini food processor or blender, blend the onion, zest, orange and lemon juice, mustard, salt, and pepper. When combined, drizzle in the olive oil and blend until smooth. 

  2. This will keep in the fridge for a couple of days. Enjoy!

Recipe: Luscious Homemade (Dairy-Free) Caesar Dressing

This easy Caesar dressing is great on salads you might find yourself using it as a sauce with other foods! It’s even good on sweet potatoes.

Don’t be scared of the anchovy paste – but if you decide not to use it, be sure to adjust the salt and pepper level.

 

Ingredients:

  • 1 egg

  • 1 tsp anchovy paste

  • 1-2 garlic cloves, minced

  • ¼ tsp each salt and pepper

  • 1/2 Tbsp. apple cider vinegar

  • 1 tbsp lemon juice

  • 1 cup avocado oil or light-tasting olive oil

 

Directions:

  1. If using an immersion blender, place all the ingredients except the oil in a jar and insert the blender. Blend until smooth, about 30 seconds. With the blender still on, slowly drizzle in the oil, moving the blender around so that all the oil is incorporated and the dressing emulsifies.

  2. If using a blender, do the same as above, except slowly drizzle in the oil until it emulsifies into dressing.

  3. The mixture should be thick and creamy when you’re done.

  4. Place in an airtight jar and store in the refrigerator for 2 weeks.

Recipe: Greek Dressing

Ingredients:

  • ¼ cup olive oil

  • 2 clove pressed garlic

  • ¾ tsp oregano

  • ¾ tsp basil

  • ½ tsp black ground pepper

  • ½ tsp sea salt

  • ½ tsp onion powder

  • 1 tsp Dijon mustard

  • ⅓ cup red wine vinegar

Directions:

  1. Combine all ingredients into a jar or storage container, and shake well.

  2. Let the dressing sit for a minimum of 10 minutes before serving to let flavors blend together.

Recipe: House Balsamic Dressing

Serving Size: 12 Servings (2 Tbsp per serving)

Ingredients:

  • 1 cup extra virgin olive oil (preferably first cold pressed)

  • ⅓ cup good quality aged balsamic vinegar

  • 1 Tbsp dried parsley

  • ½ tsp sea salt

  • Freshly ground pepper to taste

  • 1 Tbsp honey mustard (organic if possible)

  • 1 garlic clove, passed through a garlic press or minced (optional)

Directions:

  1. Add all ingredients into a bowl.

  2. Whisk until thick and creamy.

  3. Check for seasoning.

  4. Store in refrigerator.
